I don't know if I was extremely hungry or what, but I definitely banged my pots and pans with full force yesterday! Most of the dishes I made for yesterday's lunch were inspired by the recipes I found over the internet thanks to Maangchi, Ltkman, and of course from me (just a teeny bit).
I made Maangchi's eggplant and spinach side dishes (I had to go without the sesame seeds for both of these dishes because I live in the boonies and an Asian grocery store is almost an hour drive away), and I finally fried up the last of the mandu's that I made. I also made some seafood soup. I had it at the Four Seasons Asian Restaurant (Korean) located in Shawnee Mission, Kansas. I really didn't know exactly all the ingredients they put in the soup but there were mushrooms, shrimp, tofu, and some meat. I added eggplant into the soup for the extra flavor. I used the head of the tiger shrimps for the soup base and added in some dashi and lots of chopped Asian chillies..extra spicy for the stomach..I didnt' like the results afterward though hehe (x_x)
In addition, I made Thai crispy pork belly (moo krawp) and Thai banana in coconut milk (kluay buat chee). Instead of using the regular size bananas I used the baby bananas. The banana dish is almost as similar to a banana dish that my mom made but she added the other extra ingredients that I do not know what they are called but they are kinda starchy and grainy. Maybe some of the Vietnamese know what I am talking about. I also made soba but since I didn't have all the ingredients, I kinda created my own. It turned out not too bad. Lastly, I attempted to make thit kho (Vietnamese caramelized pork). I think I like my mom's thit kho is way better 'cause mine still needs a lot of improvement ;]
HERE ARE SOME PICS OF THE FOOD THAT I MADE..ENJOY

I got caught sneaking into the fridge for some more food lol. I was looking for some grapes. Well, it seemed like I still need to crack open that watermelon sitting next to the sink. I'm too lazy in the moment so that watermelon got lucky. I'll let it live for another day...and of course there were dishes that need to be washed! I used up all of my woman-energy from chopsticks picking, soup slurping, and sweaty forehead, so I had to take a break from the kitchen after my meal besides the FRIDGE ;] Nothing wrong with grabbing a snack after a heavy meal.
